My Favorite Marinade

And you guessed it, it contains fish sauce!   This marinade is the secret to perfection when grilling beef, shrimp or chicken.  This weekend  I soaked my beef chunks in the marinade and made skewers by adding strips of green, red and yellow bell peppers and red onions.  I originally found the recipe in my Self Magazine and have used it over and over since.  The original recipe said to puree the ingredients, but I've always just mixed them and let the protein soak in it prior to grilling.  


Ingredients:

1/2 cup fresh cilantro, chopped

4 cloves garlic, thinly sliced

3 tbsp low-sodium soy sauce

1 tsp grated orange zest

1 tsp sriracha

1 tsp fish sauce

1 tsp brown sugar
vegetable cooking spray

Preparation:
Whisk cilantro, garlic, soy sauce, orange zest, sriracha, fish sauce and sugar.  Add your protein.  Marinade for 30 minutes before grilling.

To prepare beef skewers, you will need:

1 lb lean beef sirloin, cut into 1/8-inch strips

1 each red, green and yellow bell peppers, cored, seeded and cut into 2 1/2-inch pieces

½ red onion, 1 inch pieces

Thread beef, peppers, and onion on skewers, alternating ingredients.  Pour remaining marinade over prepared skewers and grill on high heat until no longer pink, about 3 minutes.
